Easter CupCakes with my Girls (2012)

I love baking and my girls love baking with me.  Today we decided to celebrate Easter by making cupcakes to share with the family tomorrow.  We started out by using some simple store bought ingredients.  For the grass I used sweetened coconut and added a few drops of food coloring:




Then we mixed everything according to the package directions for cupcakes.  I omitted the oil and used 1/4 cup of applesauce though.





Finally, after they were all cooled, we decorated them, which of course was the best part!

When life hands you lemons, make lemonade cake! This moist lemon cake drizzled and filled with an easy lemon filling will remind you of summer any time of year.


Prep Time:  20 minutes    Total Time:  3:10   Makes 12 Servings
 
 
                                                                                       
1 box Betty Crocker® SuperMoist® lemon or yellow cake mix
Water, vegetable oil and eggs called for on cake mix box
1 can (6 oz) frozen lemonade concentrate, thawed
3/4 cup powdered sugar
1 container Betty Crocker® Whipped fluffy white or fluffy lemon frosting
Yellow colored sugar, if desired
 
 
  1. Heat oven to 350°F (325°F for dark or nonstick pan). Make cake as directed on box for 13x9-inch pan. Cool 15 minutes.
  2. Mix lemonade concentrate and powdered sugar. Pierce top of warm cake every 1/2 inch with long-tined fork, wiping fork occasionally to reduce sticking. Drizzle lemonade mixture evenly over top of cake. Run knife around sides of pan to loosen cake. Cover and refrigerate about 2 hours or until chilled.
  3. Spread frosting over top of cake. Sprinkle with colored sugar. Store covered in refrigerator.
Makes 12 servings

~I absolutely love spanish food! This is one of my favorites to make and I have found this simple recipe to share with you.

 

 

 

Empanadas

Ingredients

  • 1/2 cup finely diced onion
  • 1/4 cup finely diced green pepper
  • 1/2 pound lean ground beef
  • 1 medium potato, peeled and diced
  • 1/4 cup raisins
  • 1/2 cup beef broth
  • 1/4 cup diced green olives
  • 1-1/2 teaspoon Spice Islands Cumin, Ground
  • 1 teaspoon Spice Islands Paprika
  • 1/2 teaspoon Spice Islands Pepper, Black Fine Grind
  • 1 hard cooked egg, chopped
  • 1 egg, lightly beaten
  • unbaked pie crusts, 3 sheets
  • 1 tablespoon corn oil

Directions

Heat oil in large skillet. Add onion and green peppers; cook until tender. Crumble in ground beef and cook until nearly cooked through.

Add potato, raisins and beef broth; reduce heat. Cover and cook 10 minutes. Stir in olives, cumin, paprika and black pepper. Continue to cook 5 minutes, stirring occasionally. Remove from heat and stir in egg. Spread on a shallow tray/pan and refrigerate for 30 minutes.

Lightly sprinkle counter with flour and roll each crust to 1/4-inch thickness. Cut in 4-inch circles (can use a small bowl and cut around edges with a sharp knife). Reroll dough scraps.

Lightly brush egg over interior edges of each wrap. Holding wrap in one hand place about 2 tablespoons filling in center of wrap lightly pressing edges to seal. Place on baking tray and seal edges of empanada with a fork. Continue with remaining wraps and filling.

Bake at 400°F for 10 minutes, brush with additional egg wash and bake an additional 7 to 12 minutes until browned.

Recipe Note: Empanada wraps can be found in large grocery stores or Latin markets. For best results, deep fry the empanadas.

Ingredients

1 each red and green bell pepper
2 tbsp Neufchatel cheese, softened
12 slices "Oscar Mayer Deli Fresh Smoked Ham"


Directions:

1. Cut peppers in half, lengthwise; remove and discard seeds.
Cut each piece into three lengthwise strips.

2. Dry out the inside of peppers with paper towels; spread with the cheese.

3. Place one pepper strip on each ham slice; wrap ham around pepper.
Secure with wooden toothpicks.

Yield: 12 wraps (4 servings)
Serving Size = 3 per serving

Ingredients

2 lbs skinless, boneless chicken breast halves or thighs,
cut into 1-inch pieces

2tsp ground cumin
1/4 tsp salt
1 tbsp olive oil
1 (16 oz) jar green salsa
1 (16 oz) bag frozen pepper stir-fry vegetables
1 (15 oz) can cannellini beans, rinsed, drained
1 (14 1/2 oz) can diced tomatoes with onion and garlic
sour cream (optional)
Shredded cheese (optional)

Directions:

1. In a large bowl, toss chicken with cumin and salt to coat. In a large skillet, cook chicken,
half at a time, in hot oil over medium heat until no longer pink. Drain off fat.
Place chicken in a 4 or 5 quart slow cooker. Stir in salsa, stir-fry vegetables, beans and undrained tomatoes.

2. Cover and cook on LOW 4 to 5 hours or HIGH 2 to 2-1/2 hours.

3. Reserve 3 cups of the chili; store as directed below. Serve remaining chili.
Optional: Top with sour cream and cheese if desired.

Makes 4 (1-1/2-cup) servings and reserves.

Storage:
To store reserves:Place chili in an airtight container. Seal and chill for up to 3 days.

Weight Watchers Crockpot Spicy Chicken and Shrimp




Ingredients:

1 lb boneless skinless chicken thighs
(4 oz) smoked turkey sausage
1 cup chopped bell peppers
1 cup thin sliced celery
1 cup chopped onion
1 (14-1/2 oz) can low salt diced tomatoes, undrained
1 (10 oz) can Rotel* tomatoes, undrained
2 tbsp quick tapioca
1 tsp dried basil, crushed
1/4 tsp cayenne pepper
(4 oz)frozen peeled, deveined medium shrimp, thawed
2 cups frozen cut okra
3 cups hot cooked brown rice

Directions:

1. Cut chicken into bite size pieces. Halve sausage lengthwise and cut into 1/2 inch thick slices.
In a 3 1/2 or 4 quart slow cooker, combine chicken, sausage, bell pepper, celery and onion.
Stir in diced tomatoes, Rotel tomatoes, tapioca, basil and cayenne pepper.

2. Cover and cook on LOW 6 to 8 hours or HIGH 3 to 4 hours.

3. If using LOW setting, after 6 to 8 hours turn to HIGH setting and stir in shrimp and okra.
Cover and cook about 30 minutes more or until shrimp are opaque. Serve with hot cooked brown rice.

Yield: 6 servings
Serving Size = 1 1/3 cups chicken mixture plus 1/2 cup rice.

Healthy banana muffins with a double dose of chocolate. All I can say is YUM.
I’m always on the lookout for new ways to use up the over ripe bananas that invariably end up languishing on the counter. I can’t stand to toss them away.
Banana bread is the obvious solution. Even easier is to peel them and then toss them into a ziplock bag for the freezer so they are there when I want a healthy smoothie.
This weekend I was ready to turn my way-too-ripe bananas into something more special: chocolate banana muffins.
Muffins are a favorite, but I don’t often indulge in them during the week, preferring to keep them as a weekend treat – especially when they contain chocolate!
These skinny chocolate banana muffins have just 5 WW PointsPlus Value, making them a manageable indulgence. They could defintely work as dessert in my book, especially if dusted with a little confectioners sugar or drizzled with a bit of icing.
They are at their best still warm from the oven, but will stay moist and tempting for a few days, particularly if you reheat them in a warm oven for 5 to 7 minutes.

Skinny Chocolate Banana Muffins Recipe

A delicious and decadent way to use up ripe bananas, these skinny muffins are sure to brighten your morning
Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup white whole wheat flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed bananas (about 2)
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/2 cup miniature semisweet chocolate chips
Instructions
  1. Position an oven rack in the center of the oven and preheat the oven to 350 degrees. Place paper liners in a 12 cup standard muffin pan and set aside.
  2. In a large bowl, whisk together the flours, baking powder, baking soda, and salt until well blended.
  3. In another bowl, whisk together the mashed bananas, sugar, brown sugar, eggs, and oil until well blended.
  4. Add the banana mixture to the flour mixture and stir together just until blended. Gently stir in the chocolate chips.
  5. Divide the batter evenly between the lined muffin cups.
  6. Bake in the center of the oven for 20 to 25 minutes, until a toothpick inserted in the center comes out clean.
  7. Take the pan from the oven and set the pan on a wire rack. Let the muffins cool in the pan for 2 or 3 minutes and then take them out and place them directly on the wire rack to cool completely.

These muffins turned out moist and delicious. The banana flavor really comes through. I think they would be great as cupcakes spread with a thin layer of frosting or sprinkled with confectioner’s sugar.
Next time I want to experiment with adding 1 to 2 teaspoons of coffee powder

Lemon Blueberry Cupcakes

Lemon-Blueberry Cupcakes with Egg-Free Lemon Curd


I have a really strong aversion to eggs in their raw or close-to raw state. Basically anything that resembles or tastes like egg (scrambled eggs, creme brulee, etc), is a no-go in my book. Even thinking of them makes me feel kind of green in the face. Why? Well, My mom (bless her heart) decided that our childhood would be bettered by plopping a raw egg yolk into our hot cereal every morning (gag). The damage was done, and to this day I still can hardly look at a bowl of hot cereal, or a carton of eggs without grimacing. Anyhow...all this is to explain why it was such a surprise when this Tuesday the idea of cupcakes made to look like little sunny side up eggs came to mind. I should have panicked and then rushed for a waste-bin...but I didn't. Maybe Easter has taken over my brain. In any case, today I'm happy to be able to share my Lemon-Blueberry Cupcakes with Egg-Free Lemon Curd and Lemon Whipped Cream Frosting with you (phew...say that 3 times quickly). Hooray!

So, going into this, I knew I wanted to create something that would use up some of my frozen blueberries from last year's epic Summer berry picking session, and decided to adapt this Lemon Cupcake recipe by My Baking Addiction. For my version I used the zest and juice from Meyer Lemons, and then folded in 1 cup of frozen blueberries (fresh would also work) into the batter at the very end. Of course I also made it gluten-free (using Carol's Gluten-free Flour and gluten-free vanilla). Then instead of a heavy frosting, I decided to lighten the whole thing up with this zesty Lemon Whipped Cream Frosting (I had to add a couple extra Tablespoons of sugar to my batch, and used Meyer Lemons instead of standard ones). Lastly, I topped the whole thing off with a dollop of egg-free lemon curd that I created (heavily adapted from this recipe). You could also use a traditional lemon curd recipe or even buy a jar of it at the store to save some time. If you really need the lemon color to pop you could also add in a drop of yellow food coloring, but I don't think it's essential.

To be honest, I think the lemon curd could have turned out a bit better texture-wise, but since I've never eaten the real deal I don't have anything to base it off of. The flavor was awesome, so if anything I might decrease the amount of cornstarch that I used so that the end result would be a bit thinner (the recipe here shows the reduced measurement).
Egg-free Meyer Lemon Curd
  • 5 tablespoons Unsalted Butter
  • 1/2 cup milk
  • 2 tablespoons cornstarch
  • 6 tablespoon sugar
  • 1 teaspoon lemon zest
  • 6 tablespoon lemon juice, freshly squeezed
  • pinch of salt
  • (optional) 1/8 teaspoon pure lemon extract
Place butter into a small saucepan and melt on low heat. Meanwhile in a small bowl whisk cornstarch into milk until combined. Zest and juice lemons and set aside. When butter is melted, turn burner up to medium-high and slowly whisk in the milk/cornstarch mixture. Add granulated sugar to pan and stir to incorporate. Add lemon zest, lemon juice, pinch of salt and lemon extract to the pan and continue to mix until sauce comes to a light boil and sauce thickens. Cook for 3 minutes more and remove from heat. Cool completely and serve. Sauce can be stored in the refrigerator for up to 3 days.


My daughter and I ate these both warm from the oven with just the lemon curd, and yesterday topped in full fashion, and love them both ways...although warm from the oven got my daughter's vote. If you end up making these or your own version, I'd love to hear what you think about them. Enjoy! xo Ez

2 tbsp chopped toasted walnuts
lettuce leaves, optional

1. Combine all ingredients except walnuts and lettuce leaves and toss well.

2. Place on lettuce leaves if desired and garnish with walnuts.

WW Crockpot Meatloaf

Ingredients

Butter-Flavor cooking spray
1-1/2 lbs extra lean ground turkey or beef
1 cup finely chopped onion
4 slices reduced-calorie white bread, torn into
small pieces

2 tsp prepared yellow mustard
1 tbsp granulted Splenda or Sugar Twin
1 tsp dried parsley flakes
1 (8 oz) can tomato sauce

Directions:

1. Spray crockpot with cooking spray.

2. In a large bowl, combine meat, onion, bread pieces, mustard, and 1/2 cup tomato sauce.
Mix well to combine and form into a large ball. Place in prepared crockpot.

3. Stir Splenda and parsley flakes into remaining 1/2 cup tomato sauce and spoon mixture
evenly over meat loaf. Cover and cook on LOW 6 to 8 hours. Divide into 8 servings.
When serving, evenly spoon sauce over top.

Yield: 8 Servings
Serving Size: 1/8 of recipe.

Weight Watchers Sweet and Sour Cole Slaw


Sweet & Sour Cole Slaw

Ingredients:

2/3 cup Light zesty Italian salad dressing, divided
1 tbsp lemon juice
2 Granny Smith apples, chopped
1 tbsp sugar
1 tbsp Dijon mustard
1 tsp caraway seed
1 pkg (10 oz) cabbage slaw mix
1/2 cup finely chopped onions
1 red bell pepper, chopped
2 celery ribs, chopped

Directions:

1. Mix together 2 tbsp of the dressing and the 1 tbsp lemon juice.
Add to apples in a large bowl; toss to coat.

2. Combine remaining dressing, sugar, mustard and caraway seed.
Add to apple mixture with remaining ingredients; mix lightly. refrigerate
at least one hour before serving.

Yield: 14 (1/2) Cup Servings or, 7 (1) Cup Servings

Prep Time: 25 minutes
Cooking Time: 6-8 hours
Ideal slow-cooker size: 5-quart

1½ lbs. bulk sausage
1 small onion, chopped
1-lb. pkg. pasta of your choice, uncooked
28-oz. jar spaghetti sauce
16-oz. can tomato sauce
¾ cup water
4-oz. can mushrooms, drained
8-oz. pkg. pepperoni, chopped
16-oz. pkg. shredded mozzarella cheese

1. Brown sausage and onion in skillet. Drain off drippings. Place one-third of mixture in slow cooker.
2. Layer in one-third of uncooked pasta.
3. Combine spaghetti sauce, tomato sauce, water, and mushrooms in bowl. Ladle one-third of that mixture over pasta.
4. Repeat the above layers 2 more times.
5. Top with pepperoni. Top that with shredded cheese.
6. Cover. Cook on low 6-8 hours.
